There is no contradiction because there is a difference between where a disc went out-of-bounds and where it became out-of-bounds (rule 11.5 and 11.7)
If a pull goes out the side of the field and then gets caught out-of-bounds, the place where it went out-of-bounds is where it went outside of the field. The place where it became out-of-bounds is where the disc was caught.
Rule 11.7 says says “the thrower establishes the pivot at the point on the playing field closest to where the disc became out-of-bounds” – which, when the disc is caught out-of-bounds, is the point on the playing field closest to where it was caught.
